Fatoosh (middle Eastern Bread Salad)

Ingredients

  • Servings: 4
  • 3 pita breads
  • 1 lb romaine lettuce, torn into pieces
  • 3 green onions, and green finely chopped
  • 1 cucumber, peeled, seeded and cubed
  • 4 roma tomatoes, cubed
  • 3/4 cup fresh parsley, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon dried mint
  • 1/4 cup olive oil
  • 1/2 lemon, juice of, of a fresh
  • 1 teaspoon sumac (optional)
  • salt, to taste

Recipe

  • 1 toast the pita breads and with a scissors, cut into bite sized pieces.
  • 2 set aside.
  • 3 toss lettuce, green onion, cucumber, tomatoes, parsley, garlic and mint in a large mixing bowl.
  • 4 add lemon juice, olive oil and sumac.
  • 5 toss.
  • 6 add bread and then salt to taste.
  • 7 best if allowed to chill for a few hours before serving.
  • 8 sumac is a maroonish colored middle eastern spice that can be found almost anywhere. it adds a nice color and flavor.
  • 9 it's not necessary, but a very nice touch to this recipe.
