Cara's Fried Cornbread

Ingredients
- 2 1/2 cups cornmeal
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon shortening, melted
- boiling water
- oil (for frying)
Recipe
- 1 put cornmeal, baking powder, salt, and melted shortning in a mixing bowl.
- 2 add enough boiling water until you have a thick mushy consistency. (water must be boiling.).
- 3 set aside until cool enough to handle the mixture in your hands.
- 4 heat frying oil until very hot.
- 5 drop in hand formed flat patties, and fry until light brown.
- 6 remove to drain and cool.
