Orange-pecan Oatmeal Muffins

Ingredients
- 2 large egg whites (or equivalent egg substitute)
- 1/4 cup maple syrup
- 3 tablespoons orange juice
- 1 cup skim milk (or 1% milk)
- 1 tablespoon orange extract
- 1 teaspoon ground cinnamon
- 1 teaspoon ground allspice
- 1/4 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1 tablespoon grated orange peel
- 1 1/2 cups rolled oats
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/4 cup chopped pecans
Recipe
- 1 preheat oven to 350 degrees f. prepare muffin tin with vegetable cooking spray.
- 2 in a large bowl, whisk egg whites until frothy. add the maple syrup, orange juice, milk, extract, spices and orange peel.
- 3 mix with a wooden spoon, until well blended. stir in the oats, flour and baking powder until all ingredients are moistened. fold in the pecans.
- 4 fill 12 muffin cups about 2/3 full and bake for 20 minutes or until muffin tops are golden and spring back to the touch.
