Double Bran - Multigrain Bread

Total Time: 2 hrs 30 mins Preparation Time: 2 hrs Cook Time: 30 mins

Ingredients

  • 1 1/2 teaspoons dry yeast
  • 1 cup bread flour
  • 2 1/4 cups whole wheat flour
  • 1 teaspoon gluten
  • 2 tablespoons dry milk
  • 2 teaspoons salt
  • 2 tablespoons butter, melted
  • 2 tablespoons brown sugar
  • 1/2 cup bran flakes
  • 1/3 cup natural bran, toasted
  • 1 1/2 cups water

Recipe

  • 1 dissolve yeast in water.
  • 2 in separate mixing bowl, combine all dry ingredients except flours and salt.
  • 3 add melted butter and yeast/water mixture while mixing on low speed with bread hook.
  • 4 slowly add flours and salt and mix until firm dough forms, you may need to add a little more bread flour if it's too wet.
  • 5 knead into a dough ball, rub with olive oil and place in greased bowl.
  • 6 cover loosely with plastic wrap and dish towel.
  • 7 let raise until doubled.
  • 8 turn onto floured surface and knead.
  • 9 form into a loaf and place in 9x5 loaf pan.
  • 10 let rise until doubled again.
  • 11 bake in 350 degree oven for 30 min.
  • 12 remove from pan and brush top with butter or spray with cooking oil.
