Julia Child's Pita Bread

Total Time: 2 hrs 3 mins Preparation Time: 2 hrs Cook Time: 3 mins

Ingredients

  • Servings: 12
  • 1 lb self-rising flour (2 3/4 cups)
  • 3/4 cup cake flour
  • 2 teaspoons salt
  • 1 (1/4 ounce) package yeast, 2 tab, proofed in
  • 1/2 cup warm water
  • 1 cup water
  • 1 tablespoon oil

Recipe

  • 1 mix and knead.
  • 2 place in greased bowl and let rise double in bulk.
  • 3 push down and let rise again.
  • 4 roll out dough and cut in half.
  • 5 then cut into quarters.
  • 6 then cut into thirds.
  • 7 shape into flat round shapes and let rest for 20 minutes.
  • 8 preheat oven to 550 degrees.
  • 9 place to or three on hot stone watch closely.
  • 10 as soon as they puff up remiove them from oven and let cool.
  • 11 repeat until all are cooked.
  • 12 this will only take a few minutes and they will be very lightly browned.
  • 13 but if not brown don't worry because they are done.
