Low Calorie Blueberry Muffins

Ingredients
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 egg whites
- 2/3 cup orange juice
- 2 tablespoons cooking oil
- 1 teaspoon vanilla
- 1 cup blueberries (fresh or frozen)
Recipe
- 1 mix together flour, sugar, baking powder and salt in a medium-size bowl.
- 2 in a small bowl beat egg whites, orange juice, oil and vanilla
- 3 add to dry ingredients until just moistened.
- 4 fold in blueberries.
- 5 fill muffin cups (sprayed with nonstick cooking spray) about half full.
- 6 bake at 400 degrees for 17 minutes or until golden brown.
- 7 cool and serve on it's own or with a little creme fraiche!
