Low Calorie Blueberry Muffins

Total Time: 27 mins Preparation Time: 10 mins Cook Time: 17 mins

Ingredients

  • 1/2 cup all-purpose flour
  • 1/4 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 egg whites
  • 2/3 cup orange juice
  • 2 tablespoons cooking oil
  • 1 teaspoon vanilla
  • 1 cup blueberries (fresh or frozen)

Recipe

  • 1 mix together flour, sugar, baking powder and salt in a medium-size bowl.
  • 2 in a small bowl beat egg whites, orange juice, oil and vanilla
  • 3 add to dry ingredients until just moistened.
  • 4 fold in blueberries.
  • 5 fill muffin cups (sprayed with nonstick cooking spray) about half full.
  • 6 bake at 400 degrees for 17 minutes or until golden brown.
  • 7 cool and serve on it's own or with a little creme fraiche!
