Lemon Blueberry Muffins

Ingredients
- 2 cups flour
- 2/3 cup sugar, plus
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 12 ounces lemon yogurt
- 1 beaten egg
- 1 -2 teaspoon lemon, zest of
- 1 1/2 teaspoons vanilla extract
- 1/4 cup melted butter
- 2 cups blueberries (fresh or frozen - if frozen, thaw & drain)
Recipe
- 1 preheat oven to 400°f (200°c).
- 2 grease muffin cups.
- 3 stir together flour, 2/3 cup sugar, baking powder, baking soda and salt.
- 4 separately mix yoghurt, butter, egg, lemon zest and vanilla extract until blended.
- 5 make a well in the centre of the dry ingredients, add yoghurt mixture and stir to combine.
- 6 add blueberries and stir.
- 7 pour into muffin cups, sprinkle with remaining sugar.
- 8 bake 20-25 minutes.
- 9 cool for 5 minutes before eating.
