Lemon Blueberry Muffins

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • 2 cups flour
  • 2/3 cup sugar, plus
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 12 ounces lemon yogurt
  • 1 beaten egg
  • 1 -2 teaspoon lemon, zest of
  • 1 1/2 teaspoons vanilla extract
  • 1/4 cup melted butter
  • 2 cups blueberries (fresh or frozen - if frozen, thaw & drain)

Recipe

  • 1 preheat oven to 400°f (200°c).
  • 2 grease muffin cups.
  • 3 stir together flour, 2/3 cup sugar, baking powder, baking soda and salt.
  • 4 separately mix yoghurt, butter, egg, lemon zest and vanilla extract until blended.
  • 5 make a well in the centre of the dry ingredients, add yoghurt mixture and stir to combine.
  • 6 add blueberries and stir.
  • 7 pour into muffin cups, sprinkle with remaining sugar.
  • 8 bake 20-25 minutes.
  • 9 cool for 5 minutes before eating.
