High Protein Blueberry Muffins

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1/4 cup butter
  • 1/3 cup brown sugar, packed
  • 1 egg
  • 1 1/2 cups whole wheat flour
  • 1/3 cup wheat germ
  • 1/4 cup non-fat powdered milk
  • 1 1/2 teaspoons baking powder
  • 1 cup skim milk
  • 1 cup blueberries
  • 1/4 cup brown sugar, packed
  • 1/3 cup whole wheat flour
  • 1/2 teaspoon cinnamon
  • 1/4 cup butter

Recipe

  • 1 muffins.
  • 2 cream together the butter and the sugar. beat in the egg.
  • 3 in another bowl, combine all of the dry ingredients. mix well.
  • 4 add dry ingredients alternately with milk to the butter mixture.
  • 5 stir until combined but not over beaten.
  • 6 fold in blueberries.
  • 7 fill greased muffin tin.
  • 8 sprinkle crumb topping over each muffin.
  • 9 bake at 400 degrees for 20 minutes.
  • 10 let muffins cool a few minutes before taking them out of the pan.
  • 11 crumb topping.
  • 12 combine the brown sugar, flour and cinnamon.
  • 13 cut in the butter to form pea-sized crumbles.
