High Protein Blueberry Muffins

Ingredients
- 1/4 cup butter
- 1/3 cup brown sugar, packed
- 1 egg
- 1 1/2 cups whole wheat flour
- 1/3 cup wheat germ
- 1/4 cup non-fat powdered milk
- 1 1/2 teaspoons baking powder
- 1 cup skim milk
- 1 cup blueberries
- 1/4 cup brown sugar, packed
- 1/3 cup whole wheat flour
- 1/2 teaspoon cinnamon
- 1/4 cup butter
Recipe
- 1 muffins.
- 2 cream together the butter and the sugar. beat in the egg.
- 3 in another bowl, combine all of the dry ingredients. mix well.
- 4 add dry ingredients alternately with milk to the butter mixture.
- 5 stir until combined but not over beaten.
- 6 fold in blueberries.
- 7 fill greased muffin tin.
- 8 sprinkle crumb topping over each muffin.
- 9 bake at 400 degrees for 20 minutes.
- 10 let muffins cool a few minutes before taking them out of the pan.
- 11 crumb topping.
- 12 combine the brown sugar, flour and cinnamon.
- 13 cut in the butter to form pea-sized crumbles.
