Orange Streusel Muffins

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1 large egg, slightly beaten
  • 2 tablespoons vegetable oil
  • 1/4 cup sugar
  • 1/2 cup orange juice
  • 2 cups packaged biscuit mix (such as bisquick)
  • 1/2 cup orange marmalade
  • 1/2 cup chopped pecans
  • 2 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1 tablespoon flour
  • 1/4 teaspoon nutmeg

Recipe

  • 1 combine egg, oil, sugar and orange juice.
  • 2 add biscuit mix, stir until moist.
  • 3 fold in marmalade and pecans.
  • 4 by hand, beat 30 seconds.
  • 5 fill greased muffin tins 2/3 full.
  • 6 mix together topping ingredients and sprinkle on top of muffins.
  • 7 bake at 375° for 15-20 minutes or until toothpick inserted in center comes out clean.
  • 8 variations: substitute any kind of marmalade, preserves or jelly for the orange marmalade.
  • 9 if desired, bake in mini muffin tins, but reduce cook time by half.
