Mj's Migraine Muffins

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 3/4 cup flour
  • 1/4 cup whole wheat flour
  • 1/2 cup demerara sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup rolled oats
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 ripe overripe banana, mashed
  • 1 egg
  • 1/2 cup buttermilk
  • 1/3 cup vegetable oil
  • 3/4 cup semi-sweet chocolate chips

Recipe

  • 1 preheat oven to 400 degrees f.
  • 2 mix dry ingredients together.
  • 3 combine banana, egg, buttermilk and oil.
  • 4 add banana mixture to dry ingredients, stirring as little as possible, fold in chocolate chips.
  • 5 bake in greased muffin pan for 15 minutes.
