Lemon Cottage Muffins

Ingredients
- 1 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup sugar
- 2 eggs
- 1/4 cup unsalted butter, melted
- 1 tablespoon finely grated lemon zest
- 1 teaspoon vanilla extract
- 2/3 cup small curd cottage cheese
- 1/3 cup milk
Recipe
- 1 preheat oven to 425°; grease a 12-cup muffin pan.
- 2 in a big bowl, whisk together the flour, baking powder, and salt.
- 3 in another bowl, whisk together the sugar, eggs, butter, lemon zest, and vanilla until well blended.
- 4 whisk in the cottage cheese and milk until blended.
- 5 add the egg mixture to the flour mixture and stir until just blended.
- 6 divide batter evenly among prepared muffin cups.
- 7 bake for 16-20 minutes or until tops are golden and pick comes out clean.
- 8 let cool in pan on a wire rack for 5 minutes, then transfer muffins to the rack to cool.
