Ester's Vegan Cranberry Oatmeal Loaf

Ingredients
- 2 tablespoons ground flax seeds
- 1/2 cup oil
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1 cup hot water
- 1/2 cup orange juice
- 1/2 cup dried cranberries
- 1 1/2 cups whole wheat flour
- 1/2 cup oats
- 1 teaspoon baking powder
- 1 pinch salt
Recipe
- 1 mix first 7 ingredients and let sit until cranberries begin to plump.
- 2 add last 4 ingredients and mix well.
- 3 pour into an ungreased baking dish and bake for 1 hour or until done in the center.
- 4 enjoy.
