Cornmeal Jambuster Muffins

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 12
  • 1 1/2 cups cornmeal
  • 1 1/2 cups buttermilk
  • 2 1/4 cups flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 eggs, lightly beaten
  • 3/4 cup margarine, melted
  • jam

Recipe

  • 1 combine milk and cornmeal.
  • 2 let stand for 10 minutes.
  • 3 line baking tin with paper muffin cups.
  • 4 combine dry ingredients.
  • 5 blend cornmeal mixture, eggs and margarine.
  • 6 fill muffin cups.
  • 7 make a well in each muffin.
  • 8 fill each well with 1 tsp or more of jam.
  • 9 bake in 400* oven.
  • 10 check after 15 minutes.
  • 11 cooking time varies with oven and muffin size.
