Cornmeal And Whole Wheat Quick Bread

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup cornmeal
  • 1/3 cup wheat bran
  • 1/4 cup brown sugar, packed
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2/3 cup buttermilk
  • 2/3 cup butter, melted
  • 3 tablespoons liquid honey
  • 2 eggs

Recipe

  • 1 in bowl, stir together both flours and all but 2 tablespoons of the cornmeal. add wheat bran,brown sugar, baking soda and salt.
  • 2 in large bowl, stir together buttermilk, butter, honey and eggs; stir in flour mixture. scrape into parchment paper-lined 8x4-inch loaf pan; sprinkle with remaining cornmeal.
  • 3 bake in 350f oven until cake tester inserted in center comes out clean, about 50 minutes. let cool in pan on rack for 10 minutes. remove from pan and cool on rack.
