Red River Oat Bran Muffins

Ingredients
- 1 1/2 cups boiling water
- 3/4 cup red river cereal
- 3/4 cup natural bran
- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup shortening
- 1 1/2 cups sugar
- 2 eggs
- 2 cups buttermilk or 2 cups sour milk
- 2 cups rolled oats
- 1 1/2 cups raisins, chopped dates or 1 1/2 cups dried cranberries
Recipe
- 1 preheat oven to 375 degrees f.
- 2 combine red river cereal and bran.
- 3 pour boiling water on it.
- 4 stir to combine and let stand 10 minutes.
- 5 combine flour, baking soda, and salt.
- 6 cream shortening and sugar.
- 7 stir in eggs.
- 8 stir in buttermilk.
- 9 stir in flour mixture.
- 10 stir in bran mixture.
- 11 stir in oats and raisins.
- 12 mix thoroughly.
- 13 fill greased muffin cups almost full.
- 14 bake at 375 degrees f for 18-24 minutes or until top springs back when lightly touched.
- 15 remove from pan and cool on a rack.
