Red River Oat Bran Muffins

Total Time: 44 mins Preparation Time: 20 mins Cook Time: 24 mins

Ingredients

  • 1 1/2 cups boiling water
  • 3/4 cup red river cereal
  • 3/4 cup natural bran
  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 cups buttermilk or 2 cups sour milk
  • 2 cups rolled oats
  • 1 1/2 cups raisins, chopped dates or 1 1/2 cups dried cranberries

Recipe

  • 1 preheat oven to 375 degrees f.
  • 2 combine red river cereal and bran.
  • 3 pour boiling water on it.
  • 4 stir to combine and let stand 10 minutes.
  • 5 combine flour, baking soda, and salt.
  • 6 cream shortening and sugar.
  • 7 stir in eggs.
  • 8 stir in buttermilk.
  • 9 stir in flour mixture.
  • 10 stir in bran mixture.
  • 11 stir in oats and raisins.
  • 12 mix thoroughly.
  • 13 fill greased muffin cups almost full.
  • 14 bake at 375 degrees f for 18-24 minutes or until top springs back when lightly touched.
  • 15 remove from pan and cool on a rack.
