Raspberry Muffins

Total Time: 1 hr 5 mins Preparation Time: 45 mins Cook Time: 20 mins

Ingredients

  • 2 eggs
  • 1 1/2 cups sugar
  • 1/2 cup butter, melted
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ground cloves
  • 1 pinch salt
  • 2 cups flour
  • 1/3 cup milk
  • 2 cups raspberries
  • 1 cup brown sugar
  • 1/4 cup sugar
  • 1/2 cup flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 2 tablespoons melted butter
  • 1 cup chopped pecans
  • 1 1/2 teaspoons freshly grated lemon peel

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 muffins:.
  • 3 beat the eggs, sugar and butter until light.
  • 4 add the milk to the egg mixture and stir until blended.
  • 5 combine baking soda, cinnamon, allspice, cloves, salt and flour.
  • 6 add the dry ingredients to the egg mixture mixing until just blended.
  • 7 carefully fold in the raspberries.
  • 8 fill well greased regular muffin pans approximately 1/2 to 2/3 full.
  • 9 top with a scant tbsp of topping.
  • 10 bake for 20 minutes or until the muffins are cooked in the middle.
