Raspberry Muffins

Ingredients
- 2 eggs
- 1 1/2 cups sugar
- 1/2 cup butter, melted
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon ground cloves
- 1 pinch salt
- 2 cups flour
- 1/3 cup milk
- 2 cups raspberries
- 1 cup brown sugar
- 1/4 cup sugar
- 1/2 cup flour
- 1/2 teaspoon cinnamon
- 1/2 teaspoon allspice
- 2 tablespoons melted butter
- 1 cup chopped pecans
- 1 1/2 teaspoons freshly grated lemon peel
Recipe
- 1 preheat oven to 375 degrees.
- 2 muffins:.
- 3 beat the eggs, sugar and butter until light.
- 4 add the milk to the egg mixture and stir until blended.
- 5 combine baking soda, cinnamon, allspice, cloves, salt and flour.
- 6 add the dry ingredients to the egg mixture mixing until just blended.
- 7 carefully fold in the raspberries.
- 8 fill well greased regular muffin pans approximately 1/2 to 2/3 full.
- 9 top with a scant tbsp of topping.
- 10 bake for 20 minutes or until the muffins are cooked in the middle.
