Medeltida Brod (middle Ages Bread)

Total Time: 2 hrs 30 mins Preparation Time: 2 hrs Cook Time: 30 mins

Ingredients

  • 2 1/4 teaspoons yeast
  • 1/2 cup lukewarm water
  • 2 cups sourdough starter
  • 1 teaspoon salt
  • 1/3 cup honey
  • 1/4 cup melted butter
  • 2 cups barley flour
  • 2 cups whole wheat flour
  • 1 cup all-purpose flour

Recipe

  • 1 dissolve yeast in water.
  • 2 add sourdough starter, salt, honey and butter.
  • 3 stir until well-blended.
  • 4 add flours and blend.
  • 5 turn onto a lightly floured surface and knead for a couple of minutes.
  • 6 place dough in a large buttered bowl, turning to coat all sides.
  • 7 cover with a towel and let rise in a warm place for about 1 hour, or until doubled in bulk.
  • 8 punch down and knead for a couple of minutes.
  • 9 divide dough into 2 equal pieces.
  • 10 shape each piece into a ball.
  • 11 place on a lightly greased baking sheet, cover, and let rise until doubled, about 45 minutes.
  • 12 preheat oven to 375°.
  • 13 bake for about 30 minutes, or until loaves are browned and sound hollow when tapped with a finger.
  • 14 cool wrapped in a towel.
