Maple Bran Muffins

Total Time: 54 mins Preparation Time: 30 mins Cook Time: 24 mins

Ingredients

  • 2 eggs
  • 3/4 cup pure maple syrup
  • 3 cups bran flakes, crushed
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 3/4 teaspoon vanilla extract

Recipe

  • 1 preheat oven to 400°; line 12-cup muffin pan with paper liners.
  • 2 in a large bowl, whisk together eggs and syrup until well blended and frothy.
  • 3 stir in bran flakes; let stand 5 minutes.
  • 4 in another bowl, whisk together the flour, baking soda, and salt.
