Maple Bran Muffins

Ingredients
- 2 eggs
- 3/4 cup pure maple syrup
- 3 cups bran flakes, crushed
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup sour cream
- 3/4 teaspoon vanilla extract
Recipe
- 1 preheat oven to 400°; line 12-cup muffin pan with paper liners.
- 2 in a large bowl, whisk together eggs and syrup until well blended and frothy.
- 3 stir in bran flakes; let stand 5 minutes.
- 4 in another bowl, whisk together the flour, baking soda, and salt.
