Orange Rhubarb Muffins

Ingredients
- Servings: 12
- 2 cups flour
- 3/4 cup sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup pecans, chopped (optional)
- 1 egg, beaten
- 1/4 cup oil
- 2 teaspoons freshly grated orange rind
- 3/4 cup orange juice
- 1 teaspoon vanilla
- 1 1/2 cups fresh rhubarb, finely chopped
Recipe
- 1 preheat over to 350°f.
- 2 in a large bowl combine the first 6 ingredients (dry).
- 3 mix remaining ingredients in another bowl until blended; stir into flour mixture until just moistened.
- 4 spoon batter into a greased or paper-lined muffin pan.
- 5 bake for 25-30 minutes. remove from pan; cool on rack.
