Jam And Spice Cake

Ingredients
- 125 g butter, softened
- 3/4 cup sugar
- 2 eggs
- 1/3 cup plum jam
- 1/3 cup buttermilk
- 1 1/4 cups self raising flour
- 1/4 teaspoon salt
- 2 teaspoons mixed spice
- 1/2 cup chopped pecans (optional)
- icing sugar, to dust
Recipe
- 1 preheat oven to 180 degrees celsius.
- 2 grease 19x9cm loaf pan.
- 3 beat butter and sugar until creamy.
- 4 beat in eggs one at a time until fluffy.
- 5 combine jam and buttermilk.
- 6 sift together flour and mixed spice with salt.
- 7 using wooden spoon add flour mixture alternatively with the liquid to butter mixture, beating until combined after each addition.
- 8 spoon batter into prepared tin.
- 9 bake 50 minutes.
