Elies Zucchini Bread

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 2 cups shredded zucchini
  • 8 1/2 ounces crushed pineapple, drained
  • 3 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 1 cup nuts
  • 1 cup raisins

Recipe

  • 1 beat eggs until thick & foamy, add oil, sugar & vanilla & mix. add zucchini & pineapple mix well. separately mix flour baking soda, baking powder, salt, cinnamon, & nutmeg, add to wet mixture. stir in nuts & raisins. pour into 2 greased & floured pans and bake at 350 degree oven for 1 hour or until golden brown.
