Mix-in Muffins

Ingredients
- 1 1/2 cups all-purpose flour
- 1/3 cup sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter
- 1 cup sour cream
- 1 large egg
- 1 teaspoon vanilla
- 1 cup fresh blueberries or 1 cup dried blueberries
- 1 chopped banana, with
- 3/4 cup chocolate chips
- 1 tablespoon orange zest, with
- 3/4 cup dried cranberries
- 1 cup dried cherries, with
- 3/4 cup chocolate chips
Recipe
- 1 preheat oven to 400 degrees f and line 12 (1/3-cup) muffin cups with paper liners.
- 2 into a bowl, sift together flour, sugar, baking powder, baking soda, and salt.
- 3 melt butter and in a small bowl whisk together with sour cream, egg, and vanilla.
- 4 stir butter mixture (and additional ingredients) into flour mixture until just combined.
- 5 do not overmix!
- 6 handle this batter gently!
- 7 divide the batter among muffin cups (this batter is thick and will not run easily like other muffin batters) and bake in middle of oven until golden and a tester comes out clean, about 20 minutes.
