Low Fat Chili-cheese Cornbread

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • 1 cup all-purpose flour
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup yellow cornmeal
  • 1/4 cup nonfat dry milk powder
  • 1 tablespoon sugar
  • 1 cup water
  • 1/2 cup fat-free egg substitute
  • 2 tablespoons vegetable oil
  • 3/4 cup shredded low-fat cheddar cheese
  • 1 (4 1/2 ounce) can chopped green chilies, drained
  • veg. cooking spray

Recipe

  • 1 combine first 6 ingredients in a medium bowl.
  • 2 make a well in the center.
  • 3 combine water, egg substiute, and oil.
  • 4 add to the dry ingredients, stirring just until moist.
  • 5 stir in cheese and chiles.
  • 6 pour into a 8 inch square baking dish coated with cooking spray.
  • 7 bake at 375f for 30 minutes or until golden.
  • 8 cut into squares.
