Ice Cream Muffins

Ingredients
- 2 liters chocolate ice cream
- 3 1/2 cups self raising flour
- 1 teaspoon baking powder
Recipe
- 1 melt the ice cream.
- 2 sift the flour and baking powder together into a bowl.
- 3 add the ice cream to the flour.
- 4 combine but don't overmix.
- 5 spoon into muffin tins.
- 6 bake in a moderate oven for 12-18 minutes (test one by inserting a skewer).
- 7 leave in tins for 5 minutes then remove and cool.
- 8 makes approx 2 dozen muffins.
