Ice Cream Muffins

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 2 liters chocolate ice cream
  • 3 1/2 cups self raising flour
  • 1 teaspoon baking powder

Recipe

  • 1 melt the ice cream.
  • 2 sift the flour and baking powder together into a bowl.
  • 3 add the ice cream to the flour.
  • 4 combine but don't overmix.
  • 5 spoon into muffin tins.
  • 6 bake in a moderate oven for 12-18 minutes (test one by inserting a skewer).
  • 7 leave in tins for 5 minutes then remove and cool.
  • 8 makes approx 2 dozen muffins.
