Olive And Arugula Flatbread Pizza Salad

Ingredients

  • Servings: 4
  • flatbread pita bread or italian bread
  • 2 teaspoons extra virgin olive oil
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon red wine vinegar
  • 2 cups baby arugula leaves
  • 1/4 cup olive tapenade
  • 6 pimiento stuffed green olives, sliced
  • 1 ounce parmesan cheese, shaved
  • salt & freshly ground black pepper

Recipe

  • 1 brush bread with 2 teaspoons olive oil.
  • 2 in a jar, combine 2 tablespoons olive oil, lemon juice, vinegar, 1/4 teaspoon salt and 1/8 teaspoon black pepper; shake to combine.
  • 3 toss dressing with arugula.
  • 4 grill flatbreads, over medium heat, until golden brown, 1 or 2 minutes, turning once.
  • 5 spread grilled flatbreads with olive tapenade, leaving a two inch border.
  • 6 top with arugula, olives, and parmesan.
